What I’ve Been Eating

IMG_1764I had such a wonderful holiday weekend and hope that you did too! There is something so fabulous about spending a few days in the mountains with family and friends. We swam, drank, sang, ate, and spent as much time outdoors as possible. We also hiked to Inspiration Point above Lake Alpine which was awesome! From grilled lemon and herb chicken to pesto pasta salad to raspberry cassis ice cream to black bean burgers, there was tons of amazing food. Actually, I’ve had a lot of  deliciousness over the past month. Take the whole beef tenderloin pictured above. We served it with chimichurri and baby potatoes. Below, some other dishes I’ve recently enjoyed.
